  2. Wrap the tofu with paper towel, press it under weight to drain. I use a stoneware bowl. Sit in fridge half day/overnight.

Put the tofu and seasoning ingredients in a food processor and blend until you get a cheese spread texture. With the hand blender, blend a jet of olive oil with a handful of basil leaves.
