- In a large plate mix salt with flour. Dredge chops in flour on both sides and set aside.
- Prepare your ginger and scallions. In a deep saute pan over medium heat, add butter and oil. Let butter melt then add the ginger and scallions. Keep them to the sides of the pan.
- Place chops in and cook on one side about three minutes. Flip, cook another 2-3 minutes. When done, set them aside and cook the other two.
- In the same pan add the balsamic vinegar. Cook one minute. Add in cherries and half of remaking butter.
- Cook one minute, add in vegetable broth. Cook five minutes.
- With the back of a fork, smash down cherries. Add last amount of butter. Let butter melt and sauce is done.
