  5. Lower heat and let sauce simmer. Add seasoning, pepper and paprika. DO NOT add salt at this time.
  6. When the sauce has thickened, Add mushrooms and ham.
  7. Increase heat to a slow boil and cook until the mushrooms soften. I like mine with a little bite left in them.
  8. Season to taste with additional Italian seasoning, salt, pepper. Serve over pasta, sprinkle with fresh grated parmesan.
